WINE MAKING

Naturally frozen Vidal grapes were hand harvested at -10˚C from Niagara Peninsula vineyards. The grapes were pressed frozen, releasing only one drop of pure extract from each grape. Barrel fermented (25%), and then aged in 100% French oak for 2 to 3 months.

FLAVOUR PROFILE

A bright yellow gold colour with a beautiful bouquet of star fruit, Bartlett pear, candied pineapple, lemon marmalade, and a touch of floral honey. This Vidal Icewine is a rich, luscious, perfectly sweet wine with flavours of juicy peach, tropical fruit, and a drizzle of honey. The bracing acidity slices through and leaves wonderful flavours of tangy citrus marmalade, lemon drops, and candied pineapple lingering exquisitely on the finish

SERVING SUGGESTIONS

Serve chilled at 8 to 10ºC in small white wine glasses, 1 to 2 ounces per person. Enjoy before a meal, chilled with your favourite vodka and a couple of frozen grapes for an amazing Icewine Martini. Make a wonderful Trius Icewine Royale by adding 1 ounce of Icewine to 4 ounces of Trius Brut sparkling wine. Enjoy during a meal with a chicken liver pâté; spicy crab cakes; spicy Asian vegetable rolls; spicy Thai dishes; mango Thai salad. Enjoy with the cheese course which may include Manchego, 2 to 4-year-old Canadian cheddar, or blue cheeses. Enjoy with fruit-based desserts of pineapple, apple, peach, pear, and apricot. Serve with pineapple upside down cake; apple strudel; apple pies; apricot fruit flan; poached peaches. Enjoy now through 2030.
