Tiny spiraling bubbles rising through the wine on a delicate salmon pink coloured backdrop. Medium-bodied and flavourful. Wild strawberry, blood orange and yeast notes gently rise from the glass. White currants and white cranberry flavours dance on the elegant framework. Cherry, white currant, wild strawberry and yeast notes linger on the refreshing finish.

WINE MAKING
A traditional ‘méthode’ sparkling wine made with hand-picked, whole-cluster pressed Pinot Noir (70%), Chardonnay (23%) and Pinot Meunier (4%) grapes, as the ‘white’ base wine, and the addition of ‘red’ Gamay Noir (3%), all aged in stainless steel just before tirage. Aged ‘sur lie’ for 21 months in bottle before disgorging and dosage.

SERVING SUGGESTIONS
Serve at a cool 8 to 10°C. Fabulous refreshment anytime of the day. Serve with oven roasted tomatoes with goat cheese on toasted baguette; Gruyere, Swiss and Emmenthal cheese fondue with light rye bread; creamy cheeses with baguette; roasted beet risotto; simply prepared seafood and shellfish; roast chicken or turkey. Drink young and fresh.
