Clear and bright with a fresh clean aroma of gooseberry, yellow apple, golden kiwi, citrus, and lemongrass. A light to medium-bodied, fresh, and lively Sauvignon Blanc. Refreshing flavours of pink grapefruit, green apple, and gooseberry dance on the palate, then as the wine warms, look for notes of passionfruit and peach to develop. Refreshing notes of grapefruit, gooseberry, white currant, and a hint of lemon herbs and mineral linger on the finish.

WINE MAKING
Our Sauvignon Blanc is harvested from Sustainable Winegrowing Ontario Certified vineyards across the Niagara Peninsula that provide perfect growing conditions for this varietal. A very gentle pressing, just enough to burst the skins, allows the free run juice to be separated from its skins. The juice is cool fermented and aged in stainless steel tanks for pure fruit expression.

SERVING SUGGESTIONS
Serve at a cool 10 to 12ºC. Fabulous spring and summer refresher. Enjoy anytime of the year with shellfish, oysters, sushi, bouillabaisse; delicate fish fillets with fresh herbs; summer gazpacho; goat cheese and roasted red pepper stuffed pitas; steamed asparagus; summer salads; goat cheese stuffed chicken breast; goat cheese soufflé; lemon parsley chicken; ceviche; basil pesto on pasta and chicken; Margherita pizza. Drink while young and fresh.
