Bright yellow gold colour with a wonderful bouquet of yellow apple, white peach, golden kiwi, and floral honey. A rich yet elegant Icewine that is perfectly sweet and balanced by bracing acidity. A burst of flavours suggesting white peach, Asian pear, and quince excite the palate. Lovely notes of tangy marmalade and yellow fruits linger endlessly on the finish.

WINE MAKING

Niagara’s Icewine pioneer since 1983. Naturally frozen Vidal grapes are harvested from Sustainable Winegrowing Ontario Certified Vineyards in the Niagara Peninsula at -10°C. The grapes are pressed frozen, releasing only one drop of pure extract from each grape. Fermentation and aging are performed in stainless steel at a cool temperature to retain fruit concentration.

SERVING SUGGESTIONS

Serve chilled at 8 - 10°C in small white wine glasses, 1 to 2 oz per person. Enjoy before a meal, chilled with your favourite vodka and a trio of frozen grapes for an amazing Icewine Martini. Enjoy during a meal with creamy pâté. Also, a wonderful companion to Indian curry dishes and spicy Asian cuisine. Enjoy with the cheese course which may include Manchego, 2-year-old Canadian cheddar or creamy blue cheeses. Enjoy after a meal, with fruit-based desserts of yellow plum, sweet citrus, pineapple, peach, pear, or apple. Enjoy with crème caramel, crème brûlée, custards and syllabubs.
